Don't expect Sekiro: Shadow's Die Twice reviews to be out before the game launches or even day one because apparently, Activision -- the publisher of the game -- won't be sending out early review codes or copies of the game to press people before the game launches.
It seems like media people will get hold of the game at the same time as the general public which is a practice generally not followed by big AAA publishers these days. This will cause hindrance in the publishing of reviews as now the press will try to rush in with the reviews of the game as soon as the embargo lifts up.
It's a sad situation since people won't get enough time to analyse the game's different aspects properly. Considering Sekiro's brutal and unforgiving difficulty it clearly won't be a walk in the park, meaning it will require even more time and patience than other games in the market.
This definitely works both ways however as much people would buy the game blindly before the reviews are even out. Such a stunt was recently pulled by Bethesda as well with the release of Dishonored 2, The Evil Within 2 and Wolfenstein 2 The New Colossus and it brought in quite a sale for them. On the other hand, people might become more sceptical about the game and wait until the reviews are in which can result in poor launch day sales.
In any case, both FromSoftware and Activision are well aware of the consequences and would most definitely be prepared for what's to come.
