He started his career with the UCF Knights and then moved to the Oklahoma Sooners, before joining the Oregon Ducks at the beginning of the 2024 season. The following year, Gabriel sustained a broken left clavicle and sat out for the remainder of the season. After three seasons with UCF, he decided to transfer to Oklahoma Sooners for the next two years of collegiate football. During his senior year, Gabriel started all 12 games for the Sooners and posted 3,660 passing yards with 30 touchdowns and six interceptions. After two seasons with Oklahoma, Gabriel decided to transfer to Oregon Ducks in late 2023 for his final year of eligibility.
