Holstein joined the Alabama Crimson Tide in 2023 but did not see any game action during his redshirt season. After a year, he entered the transfer portal and subsequently transferred to the University of Pittsburgh. In 2024, he quickly made an impact by winning the starting quarterback position over Nate Yarnell. Holstein's debut was remarkable as he completed 30 of 40 passes for 336 yards and three touchdowns in a victory against Kent State. By November 2024, he had played in nine games, completing 177 of 286 passes for a total of 2,177 yards and 17 touchdowns against six interceptions. His performance has placed him among the top freshmen quarterbacks nationally, ranking first among Power Five freshmen in passing yards and total offense. Notably, he became the first Pitt quarterback since Dan Marino to win his first seven career starts.

He has recorded four games with over 300 passing yards, tying the freshman record set by Alex Van Pelt in 1989. His dual-threat capability is further highlighted by his rushing stats; he has contributed significantly on the ground with 323 rushing yards and three rushing touchdowns.
