She was notable for scoring 32 points and helping her team gain an upset victory against the Ohio State Buckeyes on November 6, 2023. With this, she broke the record of Lisa Leslie from 1990 and established the team record for most points scored by a freshman in her debut.

She followed this up with her first double double with 31 points and 12 rebounds in a victory against the Penn State Nittany Lions with a score of 71-70 on November 22, 2024. She scored three straight 30 points during her games and tied with Cheryl Miller for the longest record streak in the history of the team.

She scored 51 points and 11 rebounds, her career high so far in a 67-58 win against the Stanford Cardinal on February 2, 2024, thereby exceeding the single game scoring record of Cherie Nelson since 1989. As a freshman, she led her team to the CIF Southern Section Open Division Championship and the regional finals. As a result, she became the Los Angeles Times Player of the Year. Watkins was also declared as SportsKid of the Year by Sports Illustrated Kids in 2020. She also played as a sophomore in her former school.
