He made his professional mixed martial arts debut in 2001 against Randy Halmot at Gladiator Challenge 6. Dean made quick work of Halmot and finished him in the first round by making him submit to a front choke and picked a first-round submission win to start his career.

Herb Dean competed in five professional bouts as a professional mixed martial artist. In his brief stint as an active fighter, he compiled a record of 2 wins and 3 losses. Dean hung up his gloves in 2007 after losing his last fight against Dave Lageno by first-round TKO.

After his fight career was over, Herb Dean transitioned to officiating the bouts inside the octagon. He has made a great impact in the UFC while refereeing matches and has been involved in some of the significant fights fought in the UFC.
