He started officiating minor hockey games around Kincardine, where he often found himself working alongside his father and other senior referees in the WOAA senior loop. In the early '90s, Pollock spent a couple of seasons in the Ontario Hockey Association (OHA) before moving on to officiate in the Ontario Hockey League (OHL) for three seasons as a linesman from 1993 to 1996.

Driven by his passion and dedication, Pollock accepted a full-time referee position with the ECHL in the summer of 1996, earning selections to officiate the Kelly Cup Finals in both of his seasons with the league. He was part of the NHL training program from 1997 to 1999. The NHL took notice of Pollock's undeniable talent and potential, offering him a minor league contract as a referee in the summer of 1999. After only one season under the minor league status, he was swiftly promoted to a full-time NHL referee contract in the summer of 2000.

Since 2000, Pollock has officiated numerous high-profile assignments, including the inaugural Heritage Classic outdoor game in Edmonton in 2003, the 2004 World Cup of Hockey, the 2011 NHL All-Star Game in Raleigh, the 2014 Sochi Olympics, the 2016 Winter Classic at Gillette Stadium in Foxboro and many more.
