Schultz's professional career in the NFL started in 2018, when he was chosen in the fifth round of the NFL draft by the Dallas Cowboys. In his debut season with the Cowboys, he performed excellently in every game he played and in the entire season, he recorded 12 receptions for 116 yards. In the entire 2019 season, he was able to participate in 16 games and he finished the following season where he recorded one reception for six yards and one kickoff return for five yards.

Schultz had a career-changing season in 2020 where the Dallas Cowboys gave him the opportunity to start at the tight end position. He continued his top-notch performance week after week and in the year 2021, he finished his last season with the Dallas Cowboys, where he recorded 78 receptions, 808 yards, and 8 touchdowns. In 2023, Dalton Schultz announced that he had signed a new deal with the Houston Texans for one year of $9 million, and in 2024, he secured a three-year $36 million deal with the Texans.
