Participating in all 13 games, he recorded 23 receptions for 222 yards (placing fourth on the team) and one touchdown. Schultz earned honourable-mention All-Pac-12 recognition and contributed significantly to blocking for running backs Christian McCaffrey and Bryce Love.

Before the 2017 season, Schultz was named to the John Mackey Award watch list. Throughout the 13 games that season, he predominantly played a blocking role, securing 22 receptions for 212 yards (ranking fifth on the team) and three touchdowns. His efforts were instrumental in supporting running back Bryce Love, who rushed for an impressive 2,118 yards. Schultz's outstanding performance led to his inclusion in the All-Pac-12 First Team, and he declared for the 2018 NFL Draft following the season.
